Lazy Girl Lunch

This is my favourite lazy lunch. It’s super quick, uses stuff I normally have in the fridge and pantry, and is hella yum. Plus it only takes about 10-ish minutes.

  • 1 cup Cherry Tomatoes Quartered
  • 1/4 Onion Diced
  • 2 tsp Olive Oil
  • 1 tbsp Butter
  • 2 slices Toast
  • Salt & Pepper To Taste


  • Dice your tomatoes and your onion.
  • Heat the olive oil in a pan over a medium-high heat. Add your onions and sweat them off for a minute or so.
  • Add your tomatoes, give them a stir, then let them break down. Use you spoon to smoosh them down a bit. This should only take a couple of minutes.
  • Once they're nice and soft, add the butter, give it a stir and let it simmer in it's juices for a little bit longer. Taste and season with salt & pepper.
  • To serve, pour the tomato and onion mix over freshly buttered toast.

You can make it healthier by ditching the butter, but it will be less delicious. The butter gives it a nice gloss and creamy taste. The crustier the bread you can get, the better. That way, when it sits for a bit, the middle goes a little soggy, but the edges stay nice and crispy-chewy. This also works well tossed through fresh pasta, and topped with some parmesan.
