3 Ingredient Peanut Butter Cookies

My lady-love/blog-love, Rosie a.k.a. The Londoner, posted this peanut butter cookie recipe the other day. It’s only got three ingredients, and none of them are flour, which is excellent, because it’s hard to come by at the moment.

These cookies are ridiculously delicious.

Check out her original post here. Watch the Instagram video too – I love her accent so much 😍.

I also added chocolate chips, because, in this time of chaos and disorder, anything goes. It’s also just a natural pairing – peanut butter and chocolate.

3 Ingredient Peanut Butter Cookies

3 ingredients, super easy, incredibly delicious.

Servings 18

  • 1 cup Peanut Butter
  • 1/2 cup Sugar
  • 1 Egg

  • 1/2 cup Chocolate Chips (milk or white)

  • Preheat your oven to 180°C.
  • Chuck all the ingredients into 1 bowl. If you're adding the cheeky choccie chips, add them at this stage too.
  • Mix it together thoroughly. It'll be thick.
  • Scoop 1 tablespoon portions onto a lined baking tray.
  • Use a fork to press them down with a cross hatch pattern.
  • Place them in the oven for 10-15 minutes, until golden. Turn the tray 180° halfway through so they cook evenly.
  • Once done, allow them to cool on the tray slightly before transferring to a cooling rack to cool completely.

Use peanut butter that is just peanuts. Crunchy is best for this recipe.
If you’re allergic to peanuts, you could probably swap it for another nut butter. I haven’t tried it, but I assume it’ll work.

I’ve baked two batches so far – one with milk chocolate chips, and one with white chocolate chips. Both are excellent. I still haven’t tried them without – because, chocolate.

These go excellently with a cup of freshly brewed tea, iced black coffee, or even a nice Scotch whiskey (perhaps a nice vanilla-noted Speyside, rather than a really peaty Islay).

Bon appetit!
